White bread requires two cups of scalded milk, 1/4 cup of sugar, two teaspoons of salt, 1/4 cup of shortening, 1 1/2 cups of cold water,two packages of dehydrated yeast, 1/2 cup of lukewarm water, and 11 to 12 cups of sifted all-purpose flour.

Combine scalded milk, sugar, salt and shortening, and add the 1 1/2 cups of cold water.

Soften the yeast in the 1/2 cup of lukewarm water, in which one teaspoon of sugar has been dissolved. When foamy, add to lukewarm milk mixture.

Blend in flour and knead until smooth. Place in greased bowl and cover. Let rise in warm place until double in bulk (about 1 1/2 hours).

Punch dough down by plunging your fist into the centre, and turn upside down in bowl. Cover and let rise for another half hour.

Place dough on floured board andcut into four sections. Mold into balls. Cover and let rise for 15 minutes.

Shape into loaves and place in greased pans and let rise until dough fills pans.Bake at 375 degrees F for 45 minutes and you’ll have four one-pound loaves of bread.
